RAZA

Latin American is decidedly a broad category. While Montreal has a few dismal Brazilian restaurants, a couple of attempts at the Argentinian steakhouse and a few purveyors of the rich tradition of Peruvian cuisine, there is one chef whose Nuevo Latino cooking defines the city’s scene for me. Mario Navarrete Jr. is a rarity for Montreal. This is not a city with an abundance of high end contemporary ethnic cuisine but Navarete regularly turns out a brilliantly inventive and technically immaculate fine dining experience using local ingredients and  influenced by the many culinary traditions of South America. Whether it is foie gras empanadas, duck magret ceviche or shrimp hauncaina, there is a lot of thought that goes into each plate and presentation is faultless. Raza serves some of the more interesting meals one can have in this city and should by all rights be full every night. It is not, belying the fact that, although Montreal fancies itself a food city, tastes remain decidedly conservative.
